Recipe: Succotash |
|
"Thufferin' Thuccotash" was is the catchphrase of Sylvester the cat, but Succotash was a Native American staple and is now a popular dish for holidays and everyday. This recipe serves 8.
2 tablespoons butter or ghee
½ cup chopped red pepper
½ cup celery
¼ cup chopped onion
1 tablespoon flour
1 cup milk
Salt pepper and cayenne to taste
1 cup grated old cheddar cheese
2 cups fresh or frozen corn
2 cups fresh or frozen lima beans
1 cup breadcrumbs
2 tablespoons butter or ghee.
Melt butter in saucepan over medium heat add pepper onion and celery sauté 3 to 5 minutes or until soft sprinkle flour over sauteed vegetables and stir to combine cook stirring for 2 minutes.
Gradually stir milk into sauteed vegetables cook over medium heat for 5 minutes or until sauce thickens. Season with salt pepper and cayenne. Stir in cheese then allow to cool.
Combine corn and beans with cheese sauce, turn into a 6 cup casserole, and top with breadcrumbs. Dot remaining butter over the top of the casserole and bake covered at 350F for 1½ hours until bubbling.
Remove lid and cook for another 15 minutes to brown the top.
Enjoy with a salad and bread! |

"There's an academic tradition called the 'Last Lecture.' Hypothetically, if you knew you were going to die and you had one last lecture, what would you say to your students?"

Last fall Carnegie Mellon University Professor Randy Pausch gave his "last lecture" and since then it has been downloaded from the Internet more than a million times. Randy Pausch is a married father of three who has pancreatic cancer. Doctors said he had 3-6 months to live. Randy has surpassed the 6 month mark.

Warm greetings Yogis and Yoginis!
 I love hearing about anything related to yoga. Recently, I had been curious about Eckhart Tolle's latest book, "A New Earth - Awakening to Your Life's Purpose". I was going to purchase it myself but then put it off. A few days later a very special person gave me a copy of the book as a gift. That afternoon I started reading.
Immediately, I was amazed by the references to Yoga such as "finding the point of stillness" that we look towards through postures, breath and meditation, "being present" in our actions and discovering our destiny and consciousness, and yes, the big topic of our "Ego". Wow, he's really talking about Yoga!
In Yoga classes we often stop for a moment to observe our mind, our thoughts, check in with the breath and body. Eckhart explains that it is every person's responsibility to be aware of their mental processes and their reactions to everyday events. I find this interesting since Kundalini Yoga is know as the Yoga of Awareness.
I had also heard about the webcast Oprah is doing each week and it peaked my interest because it is different, a great use of technology and free. So, why not check it out and see how it relates to your life and your Yoga practice.

Earth Hour 2008 - See the difference you can make! |
This Saturday, March 29th is Earth Hour when 24 cities around the world will stop using electricity between 8 PM and 9 PM.
On March 31, 2007, for one hour, Sydney, Australia, made a powerful statement about the greatest contributor to global warming - coal-fired electricity - by turning off its lights. Over 2.2 million Sydney residents and over 2,100 businesses switched off, leading to a 10.2% energy reduction across the city.
Earth Hour is the highlight of a major campaign to encourage businesses, communities and individuals to take the simple steps needed to cut their emissions on an ongoing basis. It is about simple changes that will collectively make a difference - from businesses turning off their lights when their offices are empty, to households turning off appliances rather than leaving them on standby. | |
